Rainbow Quinoa Salad

I literally came up with this “Rainbow” red quinoa salad just by looking in my fridge, and it came to me!  I purchased these colorful carrots at Trader Joe’s last week, and had realized they were still in my fridge, just waiting for me to use them.  After seeing them in there day after day, and knowing I needed to use them up, it finally happened.  This Rainbow salad is super easy, and absolutely delicious!  What I love about this salad, is it can be served at any temperature, even room temp!

Round 1 & 2 Tacos al Pastor Challenge

Um, first off, it was a hit. Tacos al pastor made easy!  I will say, that I kinda “winged” it on this one.  In my opinion, the best place for al pastor, goes straight to Tacos El Gordo. With various locations in Vegas and San Diego, this place is amazing!  So, after my most recent trip down to S.D. and of course visiting Tacos El Gordo, I figured, why not “try” to make al pastor myself. Growing up in a Hispanic family, I have had my share of al pastor, and just the smell of it brings me back to my childhood.  However,  nothing beats Tacos El Gordo.  So, this would be a challenge for me, as my husband and daughter know what to compare MINE to.

Champagne on Main

When I saw the title “Champagne on Main” on twitter recently, my eyes first went directly to the word Champagne, of course, and then when I realized it was in Ventura, CA (only 20 minutes away), I had to look into this further.  First of all, I am a huge Champagne and Sparkling Wine girl.  In my opinion, you don’t need to be celebrating something, to drink Champagne, and you also don’t have to spend a fortune on it either.  There are plenty of great Champagnes and Sparkling Wines to choose from that aren’t necessarily $50 a bottle, or even $20.00 a bottle.  So, when I came across a venue, where they were serving 40 different types of Champagnes and Sparklings, why wouldn’t I sign up?

Healthy Vegetarian Chow Mein

Leftover Veggies means Easy Healthy Chow Mein

So last week at the market, I purchased some Tofu!  I figured I would roll it into some sort of dinner this week, and I decided to use it up in this amazing Chinese inspired “light” Veggie Chow Mein!  After finally starting to settle in to our new home, we had bbq’d over the weekend and I had some leftover broccoli, zucchini and asparagus that was still sitting in the fridge, needing to be used up!  So when I put 2 and 2 together and saw my tofu sitting right next to my tupperware of veggies, it hit me! A very quick and very healthy Vegetarian Chow Mein, with ubers of veggies and tons of protein. This was a hit across the board with each family member.
