Cinco De Mayo, is the excuse to eat far too many chips and salsa and guac, and pig out on any Mexican Food you want, right?  Well most people think of Mexican as being super high in calories, and let’s face it, GREASE.  I got you covered, though!  You can easily make great authentic AND un-traditional Mexican dishes that are better for you than eating out (and of course less $$).  So, this Cinco, stay in and prepare a slightly healthier fare and have a Mexican Fiesta at home, with some of my easy (and less greasier) favs!

I absolutely love stocking up on corn when it goes on sale.  I like to  keep half for corn on the cob, and the other half, I always end up making my famous Roasted Corn Salad.  This is a winner, when you need a quick and healthy side dish for any occasion.  Perfect for Spring or Summer BBQ’s!  This is also a great dish to serve on the side of any Mexican inspired dishes as well.  And I will say, this dish was what got me through the first few rounds of Master Chef. 🙂 And I am proud of that! This Roasted Corn Salad is packed full of fun colors and veggies, and even the kids love it!

Cous Cous in a Tostada?

I recently entered the “Chopped At Home Challenge”.  This challenge, was actually the BEST success story of mine, yet.  I am going to tell you the “box” of ingredients that was given, and then I will tell you, with this “box” I made, what my Husband calls, “your best tacos yet”.  Mind you, they were made, totally by winging it, and made with an ingredient that I have never cared for, or honestly never purchased, because, well I never cared for it. lol.  So, let’s get to it…

Home made Easy Pasta Sauce

Simple Quick Gourmet 15 min Pasta

This one is for the books!  I have posted my easy peasy home made tomato sauce, in the past, however, this time I used the Veggie Pasta Barilla brand.  I love Barilla and have a huge stock of it in my pantry, but this was the first time using the veggie one.  This Barilla pasta is made out of carrots and tomatoes!  I paired it with a super easy 4 ingredient pasta sauce, and took me 15 minutes to make!  Not to mention, this is absolutely SIMPLE EASY GOURMET, just look at the picture, its beautiful! 🙂

Turkey Meatball & Vegetable Soup

….For saving me this past Friday night.  I don’t mean to brag, I don’t mean to boast (Rapper’s Delight Lyrics).  But for reals, I normally make my own soup all from scratch.  That’s right, from scratch. Mirepoix and all.  Usually using chicken or turkey bones, etc.  You get the drill.  So, after running around all afternoon this past Friday, and oh FREEZing all day, I may add, because it was in the 60’s here in LA, and please don’t think Im a wuss.  As a Los Angeles native, 65-70 is cold to me.  Don’t knock me for it.  My poor little anemic bones just can’t handle it.  So, after a long day of wearing 3 layers, and being UBER busy, I knocked out my marketing and my last stop was Trader Joe’s….
